Ingredients
- eggs, beaten
- cup milk
- cup flour
- teaspoon vanilla
- Bananas (optional)
- Apples (optional)
- Blueberries (optional)
Instructions
- Stir until smooth.
- Cover and let stand hour.
- The batter should be thin - just thick enough to coat a spoon dipped in it.
- Richard would add to cup fruit (bananas, apples, or blueberries). The children loved the surprise of that.
- Heat a to inch frying pan. Grease lightly with oil.
- Pour in just enough batter to cover the pan with a very thin layer.
- Cook on one side, turn with spatula, and brown on other side.
- Cook the pancake, one by one. Keep warm if you are serving them immediately - or set aside and reheat in oven.
