Ingredients

  • cups sliced warm boiled potatoes
  • cup chopped chives
  • teaspoon salt
  • teaspoon pepper
  • tablespoon grated onion
  • cup salad oil
  • cup cider vinegar
  • cup chopped celery
  • cup diced cucumber
  • cup sour cream
  • cup mayonnaise

Instructions

  • Combine warm potatoes, chives , salt, pepper, onion, oil, and vinegar.
  • Stir well and chill.
  • Meanwhile, mix celery, cucumber, sour cream , and mayonnaise.
  • Chill.
  • Just before serving, combine the mayonnaise mixture and the potato mixture.
  • Mix well.

Tip

Garnish with lettuce and sliced hard cooked eggs if desired. Makes servings.
