Ingredients
- chopped onions
- minced garlic
- tablespoons olive oil
- cups chopped cabbage
- stalks chopped celery
- sliced carrots
- package chopped frozen spinach
- can garbanzo beans, drained
- bottle spicy V-8 juice
- large can diced tomatoes
Instructions
- Sauté onions and garlic in oil.
- Add vegetables and cook until almost tender.
- Add V-8 juice and tomatoes.
- Simmer until tender.
