Ingredients

  • cup lentils
  • tablespoons olive oil
  • onion , finely chopped
  • celery stalks, chopped
  • carrots, diced
  • bay leaves
  • cups water or stock
  • ( ounces) can chopped tomatoes

Instructions

  • Heat oil in a large saucepan.
  • Stir in onion and cook until softened.
  • Add carrots, celery, bay leaves, and lentils.
  • Toss for minute, until coated in oil.
  • Pour in tomatoes and water.
  • Lower the heat and simmer until lentils are tender.
  • Remove bay leaves.
  • Add salt or pepper to taste.
