Ingredients
- cup lentils
- tablespoons olive oil
- onion , finely chopped
- celery stalks, chopped
- carrots, diced
- bay leaves
- cups water or stock
- ( ounces) can chopped tomatoes
Instructions
- Heat oil in a large saucepan.
- Stir in onion and cook until softened.
- Add carrots, celery, bay leaves, and lentils.
- Toss for minute, until coated in oil.
- Pour in tomatoes and water.
- Lower the heat and simmer until lentils are tender.
- Remove bay leaves.
- Add salt or pepper to taste.
