Ingredients

  • cups Uncle Ben’s long grain rice
  • Chopped cilantro
  • Dash of salt
  • to drops of yellow food coloring
  • Tbsp. green olives
  • skinless chicken breasts
  • can gandules (pigeon peas)

Instructions

  • Add olive oil to large pot.
  • Add chicken and simmer for minutes or until brown.
  • Add olives, to cups water, cilantro, salt, pepper, and food coloring.
  • Cover and cook on medium for to minutes.
  • Add rice, making sure there’s enough liquid in pot to cover rice. If not, add liquid from can of gandules.
  • Uncover and lower heat.
  • Cook till liquid evaporates.
  • Add gandules the last minutes.
