Ingredients

  • cup vegetable oil
  • cup seasoned rice vinegar
  • tsp. Dijon mustard
  • clove garlic, pressed
  • small head Bibb lettuce
  • small head green leaf lettuce
  • Granny Smith or pineapple, diced
  • cup coarsely chopped walnuts
  • cup dried cranberries
  • cup crumbled Gorgonzola cheese

Instructions

  • Combine first 4 ingredients; stir with a wire whisk until blended.
  • Set aside.
  • Just before serving, combine Bibb lettuce and remaining 5 ingredients in a large bowl.
  • Pour dressing over salad; toss gently.

Yield: 8 servings.
