Ingredients

  • eggs, beaten
  • cup milk
  • cup flour
  • teaspoon vanilla
  • Bananas (optional)
  • Apples (optional)
  • Blueberries (optional)

Instructions

  • Stir until smooth.
  • Cover and let stand hour.
  • The batter should be thin - just thick enough to coat a spoon dipped in it.
  • Richard would add to cup fruit (bananas, apples, or blueberries). The children loved the surprise of that.
  • Heat a to inch frying pan. Grease lightly with oil.
  • Pour in just enough batter to cover the pan with a very thin layer.
  • Cook on one side, turn with spatula, and brown on other side.
  • Cook the pancake, one by one. Keep warm if you are serving them immediately - or set aside and reheat in oven.
