Ingredients
- medium eggplant, peeled and sliced
- Salt
- egg
- Italian bread crumbs
- Romano cheese or Parmesan cheese
- Olive oil
- Your favorite sauce
- Mozzarella cheese
Instructions
- Sprinkle each slice of eggplant with salt.
- Put in colander.
- Place weighted plate on top to drain.
- Set aside for at least minutes.
- Rinse and pat dry on paper towel.
- Dip in egg.
- Next , mix bread crumbs and cheese together and dip eggplant.
- Sauté in oil.
- Pat with paper towel.
- Place in baking dish.
- Cover with favorite sauce and sprinkle with Mozzarella cheese.
- Bake for half an hour or until cheese is bubbly at .
