Ingredients

  • medium eggplant, peeled and sliced
  • Salt
  • egg
  • Italian bread crumbs
  • Romano cheese or Parmesan cheese
  • Olive oil
  • Your favorite sauce
  • Mozzarella cheese

Instructions

  • Sprinkle each slice of eggplant with salt.
  • Put in colander.
  • Place weighted plate on top to drain.
  • Set aside for at least minutes.
  • Rinse and pat dry on paper towel.
  • Dip in egg.
  • Next , mix bread crumbs and cheese together and dip eggplant.
  • Sauté in oil.
  • Pat with paper towel.
  • Place in baking dish.
  • Cover with favorite sauce and sprinkle with Mozzarella cheese.
  • Bake for half an hour or until cheese is bubbly at .
